Egg-cellent Egg Bites
I love something healthy that I can feel good about eating for weekday lunches or for when that snack hunger hits.
These egg bites are perfect for such moments.
INGREDIENTS
2 ½ Cups Baby Spinach (Chopped)
1 Cup Green Onion (Chopped)
1 Cup Turkey Bacon (Cut into Small Squares)
1 ½ Cup Cheddar Cheese (Grated)
12 Eggs (6 Whole & 6 Egg Whites)
Salt & Pepper to taste
INSTRUCTIONS
1. Preheat oven to 350° F.
2. Grease a standard non stick muffin pan with cooking spray and set aside.
3. Crack eggs / egg whites into a large bowl and whisk together.
4. Stir in vegetables, bacon and cheddar.
5. Pour the mixture evenly into each muffin tin in the prepared muffin pan.
6. Bake for 15-20 minutes or until the tops are firm to the touch and eggs are cooked.
7. Cool slightly and serve immediately.
PRO TIP:
Leftovers can be stored in an airtight container in refrigerator for 4 days.
They can also be frozen and reheated in the microwave.
