Spoil Yourself with Spring BLT Pasta Salad

When the seasons change I am always pouring through recipe books or searching pinterest for new recipe inspiration. The recipe below is a variation of the “Chicken BLT Pasta Salad” Recipe from the book  “Yum & Yummer” By Greta Podleski -  which is a great book for anyone who wants to eat healthy but does not want to skimp on taste.  Find her inspiring book here and the original recipe including her Creamy Poppyseed Dressing here .

Spring BLT Pasta Salad

 Prep Time:  20 Minutes
Cook Time:  10 Minutes
       Makes:   8 Cups of Salad

Ingredients

1 Pkg      Uncooked Rotini (8.8 oz 250 g) (Regular, Whole Wheat or Gluten Free) 
2 Cups   Cooked Chicken Breast
1 Cup      Halved or Quartered Grape Tomatoes
8 Slices  Cooked Bacon - Chopped
¾ Cup    Frozen Green Peas – Thawed
½ Cup    Chopped Green Onions
               Freshly ground Black Pepper to taste
Dressing
3 oz        Miracle Whip Mayonnaise
1 Tbsp     Pickle Juice
1 Tbsp     Yellow Mustard
½ Tbsp    Sugar

Instructions

  1. Cook rotini pasta according to package directions
  2. Drain, rinse with cold water and drain again
  3. Transfer pasta into a large bowl for mixing
  4. Add all ingredients into bowl and mix well
  5. Add the prepared dressing and mix well until everything is thoroughly coated
  6. Serve or Place in the fridge for a later snack
