Hip to Be Square... Zucchini Squares
These squares are a real hit in my house. They make a great meal, snack and in my opinion a great pack-able lunch.
This recipe has been slightly modified from the Original Betty Crocker Bisquick Recipe that included a few more spices. It can be found here.
I personally choose to make this recipe Gluten Free as I do have someone in my house with Celiac Disease.
Zucchini Squares
Prep Time: 15 mins
Cook Time: 35-40 mins
Ingredients
3 cups Zucchini (unpeeled) - thinly sliced
1 cup Original or Gluten Free Bisquick Mix
½ cup Onion - finely chopped (I prefer green onions)
½ cup Parmesan Cheese - grated
2 tbsp Fresh Parsley - chopped
1 tsp Dried Oregano Leaves
2-3 Fresh Garlic - finely diced
½ cup Light Olive Oil or Vegetable Oil
4 Eggs, slightly beaten
Fresh basil – sliced thinly – to taste
Salt & Pepper to taste
Instructions
- Heat oven to 350 F degrees.
- Grease bottom and sides of rectangular pan (9 X 13)
(I use parchment – it cuts nicer after baking) - Stir together all ingredients. Spread in Pan.
- Bake about 35 – 40 minutes or until golden brown.
Watch carefully – so they don’t brown too much. - Cut into 2 inch squares; cut squares diagonally in half into triangles.
